Title: Second Monitor NOT being Automatically Detected.

I have a second monitor connected to my laptop via a HDMI cable.  I then start the Infinity software with the camera connected.  I never see a popup indicating that the second monitor was detected.  I can duplicate the screen via Windows 10.  Any ideas?

Not sure what your problem is.  I have connected a second monitor to my laptop via HDMI and used it with Infinity SW when working with a group of youth showing them the wonders of the night sky.  I set up the monitor to duplicate what I see on the laptop screen so that I do not need to look at the larger monitor while I am doing this.  It worked perfectly.  The key here is that you set up the screen behavior before you ever launch the Infinity SW.
